not Orange 2023
A novel approach to the co-vinification of Xynisteri and Mavro, the 2 main indigenous grape varieties of Cyprus. Xynisteri grapes pressed together with bunches of Mavro grapes. A winemaking technique that was created here during a moment of enlightenment. This wine counts less than 700 bottles.
– Floral, medium bodied, lightly oaked –
Xynisteri & Mavro grapes– Omodos village, Kambos tou Polikarpou area.
Vinification: Xynisteri grapes of our own production are crushed and pressed. Mavro bunches are introduced and the pressing continues. The wild fermentation takes place in old barrels at cold temperature in the presence of whole berries. Sur-lees maturation for 5 months follows. The wine is bottled without stabilisation. Tartrate crystals might form.
Tasting notes: Complex aromatic profile of floral, herbal and confectionary elements. Medium body with refreshing acidity and long aftertaste.

This fresh and distinctively aromatic wine was crafted from low-yielding old Xynisteri vines grown at 850m altitude in the Krasochoria region. Fermented in stainless steel, we aim to express the fruit and character of the Xynisteri grape in this bright and refreshing style of wine.
Zambartas Xynisteri has a light yellow-straw colour, intense and complex aromatic bouquet reminiscent of citrus and stone fruits. It has crisp acidity and a lingering taste. Ideal as an aperitif or with salads & light meals.

Field Blend of Indigenous Varieties, mainly Mavro. One of the last centenarian vineyards of the country – telling of a great past and a promising future. Enjoy with authentic local dishes.
A unique wine made out of one of the few last remaining centenarian vineyards on the island, planted in 1921. Organic certified since 2019, we tend these old bush vines with great care. The vineyard contains 6 different indigenous varieties, which produce this elegant ruby red coloured wine with intense aromas of black currants, red pepper and preserved red fruits. Melusine 2011
Our Commandaria, was produced in the village of Zoopigi, at the slopes of the Troodos mountains from sundried Xynisteri grapes. After harvest we dried the grapes on elevated drying beds, with partial shading to achieve even drying and to avoid the formation of mould. We pressed the grapes after two weeks and fermented in stainless steel tanks with naturally present yeast. The wine matured for 10 years in used oak barrels in our cellar, before bottling it. With the full control over our production process, limited intervention methods and attention to detail, we present you a unique and high quality Commandaria.
Commandaria Melusine is an amber coloured wine, with complex notes of dried fruits, honey, orange peel and balanced acidity to keep its freshness.
Enjoy on its own or with dessert.
